"Easy Cheesy" Vegetable Pasta
This is something I used to cook my daughter ALOT when she was a baby from about 9 months until 18 months. It is an Annabel Karmel recipe and was ALWAYS a firm winner! It works so well an easy portable lunch too.
This pasta meal contains a good amount of vegetables to provide your little one with vitamins and minerals; including beta carotene which also promotes healthy eyes and eyesight, is a source of complex carbohydrates for energy, and of protein for body growth and repair.

Makes: 4 portions
Suitable for: 9-12 months, 12 months+
This pasta can be frozen into batches and thawed on the fridge over a 24 hour period. Once frozen use within 3 months.
Ingredients:
75g Orzo pasta or other small shaped pasta
1 carrot, peeled and finely diced
1 courgette, peeled and finely diced
3 tbsp frozen peas
15g unsalted butter
30g parmesan (or vegetarian or dairy free alternative), grated
250ml boiling water
Method:
Put the boiled water in a saucepan, add the pasta and carrot. Bring back to boil, stir and reduce the heat to low. Cover and simmer for 5 minutes
Add the courgette, re-cover and cook for 3 minutes.
Stir in the peas and cook for 3 minutes.
Stir in the parmesan.
Allow to cool and serve.
